Ingredients:
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and sauté for about 30 seconds until fragrant.
3. Add the sliced bell pepper, broccoli, snap peas, and carrot to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
4. Pour in the soy sauce and sesame oil, tossing to combine. Season with salt and pepper to taste.
5. Cook for an additional 2 minutes, then remove from heat.
6. Serve the stir-fry over cooked rice or noodles.
