This colorful and nutritious vegetable stir-fry is quick to prepare and packed with flavor. Perfect as a side dish or a main course!
Ingredients:
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 carrot, thinly sliced
- 1 cup mushrooms, sliced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles (optional, for serving)
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
3. Add the broccoli, bell pepper, snap peas, carrot, and mushrooms to the skillet.
4. Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp.
5. Pour in the soy sauce and toss the vegetables to coat evenly.
6. Season with salt and pepper to taste, and cook for another 2 minutes.
7. Serve hot over cooked rice or noodles if desired.
