Easy Vegetable Stir-Fry

Recipe:
- 2 tablespoons vegetable oil
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 medium carrot, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat the vegetable oil in a large pan or wok over medium-high heat.
2. Add the garlic and ginger, and sauté for 1 minute until fragrant.
3. Add the sliced bell peppers, broccoli florets, snap peas, and carrot to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender but still crisp.
4. Pour in the soy sauce and sesame oil, and stir to coat the vegetables evenly. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve the stir-fry over cooked rice or noodles.
