This delicious and nutritious vegetable pasta is quick to prepare and perfect for a weekday dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, diced
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g parmesan cheese, grated (optional)
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain the pasta and reserve about 1 cup of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
3. Add the minced garlic and cook for another minute.
4. Stir in the diced zucchini and bell pepper, and sauté for about 5-7 minutes until the vegetables are tender.
5. Add the halved cherry tomatoes and spinach, stirring until the spinach wilts.
6. Mix the cooked pasta into the vegetable mixture and add reserved cooking water as needed to create a saucy consistency. Season with salt and pepper.
7. Serve the pasta topped with grated parmesan cheese and fresh basil.
