These tasty veggie wraps are a perfect option for a light lunch or snack. Packed with fresh vegetables and delicious spread, they come together quickly. Preparation Time: 15 minutes
Serving Size: 2 wraps
Ingredients:
- 2 whole grain wraps
- 1 avocado
- 1 small cucumber
- 1 tomato
- 1/2 red onion
- 1 cup fresh spinach
- 2 tablespoons hummus
- Salt and pepper to taste
Instructions:
1. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork.
2. Wash and slice the cucumber, tomato, and red onion.
3. Spread hummus evenly over the surface of each wrap.
4. Add the mashed avocado, spinach, sliced cucumber, tomato, and onion on top of the wraps.
5. Sprinkle with salt and pepper to taste.
6. Roll the wraps tightly and cut in half if desired.
