Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 red onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Cut the bell peppers, zucchini, and red onion into small pieces.
3. Peel and finely chop the garlic cloves.
4. Heat olive oil in a large skillet over medium heat.
5. Add the red onion and garlic, sauté for about 2-3 minutes.
6. Add the bell peppers and zucchini, and cook for another 5-7 minutes until the vegetables are tender.
7. Season the mixture with oregano, salt, and pepper.
8. Add the cooked pasta to the vegetable mixture and stir well. If needed, add a little reserved pasta water to keep the pasta moist.
9. Serve the portions garnished with fresh basil and grated Parmesan cheese if desired.
