Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 150 g feta cheese
- 2 garlic cloves
- 3 tbsp olive oil
- Salt to taste
- Black pepper to taste
- 50 g grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Peel and finely chop the garlic cloves.
3. Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for about one minute until soft but not browned.
4. Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
5. Add the cooked pasta to the skillet and mix well. If needed, add a little reserved cooking water to prevent the pasta from being too dry.
6. Crumble the feta into the pasta and stir until the cheese slightly melts.
7. Season with salt and black pepper to taste.
8. Serve the portions with grated Parmesan cheese on top, if using.
