Serving Size: 4 servings
Ingredients:
- 200 g fresh spinach - 150 g feta cheese
- 1 small red onion
- 2 cloves of garlic
- 100 ml cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon lemon juice
- 100 g cherry tomatoes
Instructions:
1. Rinse the spinach and drain it well. Chop the red onion and garlic.2. Heat olive oil in a pan over medium heat. Add the red onion and garlic, sautéing until they are soft.
3. Add the spinach to the pan and cook until wilted.
4. Crumble the feta cheese into the spinach mixture and stir well.
5. Pour the cream over the mixture and combine thoroughly. Season with salt, pepper, and lemon juice.
6. Halve the cherry tomatoes and add them to the pan. Let the mixture simmer over low heat for about 5 minutes.
7. Serve warm alongside pasta or rice.
