Ingredients:
- 1 kg potatoes
- 500 g carrots
- 300 g green beans
- 1 dl olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- 200 g feta cheese
- Fresh herbs (e.g., parsley, basil)
Instructions:
1. Peel the potatoes and carrots. Cut the potatoes into cubes and slice the carrots.
2. Boil the potatoes and carrots in salted water for about 10-15 minutes, until they are tender. Drain and let cool.
3. Steam the green beans until they are bright green and crisp, about 5 minutes.
4. In a bowl, mix olive oil, balsamic vinegar, salt, and pepper.
5. Add the cooled potatoes, carrots, and green beans to the oil mixture and toss well.
6. Crumble feta cheese on top of the salad and garnish with fresh herbs.
7. Serve immediately or let it marinate in the refrigerator before serving.
