A delightful treat for Easter celebrations, these cupcakes are rich and topped with a creamy frosting. Preparation Time: 30 minutes
Serving Size: 12 cupcakes
Ingredients:
- 2 dl sugar - 1 dl butter
- 2 eggs
- 3 dl all-purpose flour
- 1 dl milk
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 1 dl cocoa powder (optional)
Frosting:
- 200 g cream cheese - 100 g butter
- 3 dl powdered sugar
- 1 tsp vanilla sugar
- Small chocolate eggs for decoration
Instructions:
1. Preheat the oven to 180°C (350°F). 2. Grease a muffin tin or line it with paper cups.
3. Beat the sugar and butter together until light and fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. In a separate bowl, combine the flour, baking powder, vanilla sugar, and cocoa powder (if using). Gradually add this mixture to the batter, alternating with the milk.
6. Divide the batter evenly among the muffin cups and bake in the oven for about 15-20 minutes, or until the cupcakes rise and are cooked through.
7. Allow the cupcakes to cool completely.
8. For the frosting, beat together the cream cheese and butter. Gradually add the powdered sugar and vanilla sugar, mixing until smooth.
9. Pipe the frosting onto the cooled cupcakes using a star tip.
10. Decorate with small chocolate eggs.
11. Serve and enjoy!
