Serving Size: 12 muffins
Ingredients:
- 125 g butter, at room temperature
- 150 g sugar
- 2 eggs
- 200 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 60 ml milk
- Juice and zest of 1 lemon
Instructions:
1. Preheat the oven to 180°C (160°C for fan oven). Grease a muffin tin or line with paper muffin liners.
2. Beat the room temperature butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the butter mixture, alternating with the milk and lemon juice. Mix until smooth.
6. Stir in the lemon zest and mix again.
7. Divide the batter among the muffin cups, filling each about 2/3 full.
8. Bake in the oven for about 20-25 minutes, until the muffins are golden brown and cooked through. Check for doneness by inserting a toothpick into the center; it should come out clean.
9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
