Ingredients:

- 1 cucumber (about 8 inches)
- 200 g Greek yogurt
- 3 cloves of garlic
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped coriander
- Salt to taste
- Pepper to taste

Instructions:

1. Peel and halve the cucumber lengthwise. Remove the seeds with a small spoon and set them aside.
2. Chop the cucumber into small pieces. Sprinkle with a little salt and let it drain in a sieve for about 10 minutes.
3. Press the cucumber to remove excess moisture.
4. Mix the cucumber with the Greek yogurt in a bowl.
5. Mince the garlic and chop the coriander. Add them to the mixture.
6. Add olive oil, lemon juice, salt, and pepper. Mix all the ingredients well together.
7. Let the tsatsiki chill in the refrigerator for about 30 minutes before serving.
