A delicious and exotic dish combining curried chicken breasts, coconut milk, and sweet fruits.

Serving Size: 4 servings

Ingredients:

- 500 g curried chicken breasts
- 1 tsp Thai curry paste
- 1 can (400 ml) coconut milk
- 200 g grapes
- 200 g pineapple chunks
- 1 tomato
- 1 tbsp chicken stock concentrate
- Butter and oil for frying

Instructions:

1. Heat butter and oil in a frying pan over medium heat.
2. Add the curried chicken breasts to the pan and cook until golden brown on both sides.
3. Once the chicken is cooked through, add the Thai curry paste and mix well.
4. Pour the coconut milk into the pan and stir in the chicken stock concentrate. Let the sauce simmer on low heat for about 5-10 minutes.
5. Add the grapes, pineapple chunks, and diced tomato to the sauce. Let it simmer for a few more minutes until the fruits are warmed through.
6. Serve warm with rice or noodles.
