Ingredients:
- 300 g fresh mushrooms (e.g. button mushrooms)
- 1 medium onion
- 2 garlic cloves
- 2 tablespoons butter
- 4 dl vegetable broth
- 2 dl cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Finely chop the onion and garlic. Halve the mushrooms.
2. Heat the butter in a pot and add the chopped onions. Sauté over medium heat for about 5 minutes.
3. Add the mushrooms to the pot and cook until they are soft and the moisture has evaporated.
4. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
5. Blend the soup with an immersion blender until smooth.
6. Stir in the cream and heat the soup for a few more minutes. Season with salt and pepper.
7. Serve warm, garnished with fresh parsley.
