Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh mushrooms (e.g., button or chanterelles)
- 1 onion
- 2 garlic cloves
- 200 ml cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve some pasta water.
2. Peel and chop the onion and garlic. Clean and slice the mushrooms.
3. Heat olive oil in a pan over medium heat. Add the onion and garlic, sautéing until soft.
4. Add the mushrooms to the pan and cook until they are tender and the moisture has evaporated.
5. Lower the heat and pour in the cream. Let it simmer for a few minutes.
6. Stir in the grated Parmesan cheese and season with salt and black pepper.
7. Add the cooked pasta to the pan and mix well. If the mixture is too thick, add a little reserved pasta water.
8. Serve immediately, garnished with fresh parsley.
