Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 3-4 minutes until soft.
3. Add bell pepper and zucchini to the skillet, and cook for about 5 minutes until the vegetables start to soften.
4. Stir in the cherry tomatoes and dried oregano. Season with salt and pepper. Continue cooking for another 3-4 minutes.
5. Mix the cooked pasta with the vegetables and heat everything together until the pasta is hot.
6. Serve the dish topped with grated Parmesan cheese and fresh basil if desired.
