Description: A delightful no-bake cheesecake with a buttery biscuit base and a creamy cranberry filling. Perfect for any occasion!
Preparation Time: 30 minutes (plus chilling time)
Serving Size: 8 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 300 g cream cheese
- 200 g whipped cream
- 150 g sugar
- 200 g cranberries (fresh or frozen)
- 1 tsp vanilla sugar
- 3 gelatin sheets
- 0.5 dl water
- 1 tbsp lemon juice
Instructions:
1. Crush the digestive biscuits finely.
2. Melt the butter and mix it with the crushed biscuits.
3. Press the biscuit mixture firmly into a baking pan lined with parchment paper.
4. Soak the gelatin sheets in cold water for 5-10 minutes.
5. Whip the cream cheese, sugar, and vanilla sugar together.
6. Gently fold in the whipped cream into the mixture.
7. Heat the water in a saucepan and dissolve the gelatin sheets in it. Add the lemon juice.
8. Mix the gelatin mixture into the cream cheese mixture.
9. Fold in the cranberries gently.
10. Pour the filling over the biscuit base and smooth the surface.
11. Allow the cheesecake to chill in the refrigerator for at least 4 hours or overnight.
12. Optionally, garnish with fresh cranberries before serving.
