Ingredients:
- 200 g butter
- 250 g sugar
- 4 eggs
- 300 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 200 g fresh cranberries (or frozen)
- 100 g white chocolate (melted)
- 1 tsp vanilla extract
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.
2. Beat the butter and sugar together until fluffy. Add the eggs one at a time, mixing well after each addition.
3. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry mixture to the batter, alternating with the cranberries.
4. Stir in the melted white chocolate and vanilla extract until well combined.
5. Pour the batter into the prepared cake pan and smooth the surface.
6. Bake in the oven for about 40-50 minutes or until the cake is golden brown and cooked through. Check for doneness with a toothpick.
7. Allow the cake to cool before serving. Optionally, dust with powdered sugar or top with additional cranberries for decoration.
