Ingredients:
- 1 cup cold water
- 1 cup cold low-fat milk
- 4 eggs
- ½ teaspoon salt
- 1 cup all-purpose flour
- 4 tablespoons melted butter
Instructions:
1. In a bowl, crack the eggs and add the cold water and low-fat milk. Whisk the ingredients together until well combined.
2. Add the salt and all-purpose flour to the mixture. Stir until the batter is smooth.
3. Pour in the melted butter and mix again until incorporated.
4. Let the batter rest in the refrigerator for about 30 minutes.
5. Heat a non-stick skillet over medium heat and lightly grease it.
6. Pour about ¼ cup of batter onto the skillet and tilt it to spread the batter into a thin layer.
7. Cook the crêpe for about 1-2 minutes, until the edges start to brown, then flip it to cook the other side.
8. Continue until all the batter is cooked.
