Ingredients:
- 2 medium sweet potatoes
- 1 cup quinoa
- 2 cups water
- 1 red onion
- 1 bell pepper (preferably red or yellow)
- 1 avocado
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
1. Peel and dice the sweet potatoes. Boil the sweet potato cubes in salted water for about 10-15 minutes until tender. Drain and let cool.
2. Rinse the quinoa under cold water. Cook quinoa in water for about 15 minutes until the liquid is absorbed. Remove from heat and let cool.
3. Chop the red onion and bell pepper into small pieces. Peel and slice the avocado.
4. In a large bowl, combine the cooled sweet potatoes, quinoa, red onion, bell pepper, and avocado.
5. Add olive oil, lemon juice, salt, and pepper. Mix all the ingredients well together.
6. Garnish with fresh parsley or cilantro before serving.
