Ingredients:
- 400 g pasta (e.g., tagliatelle)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 200 g cherry tomatoes, halved
- 150 g spinach
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve some of the cooking water.
2. Heat olive oil in a pan and add the chopped onion. Sauté until the onion is soft.
3. Add the crushed garlic and cook for an additional minute.
4. Add the halved cherry tomatoes and cook until they start to soften.
5. Add the spinach and stir until it wilts.
6. Combine the cooked pasta with the vegetables, adding reserved cooking water as needed.
7. Stir in the grated Parmesan cheese and season with salt and pepper.
8. Serve on plates and garnish with fresh basil.
