A moist and sweet coffee cake, perfect for serving alongside coffee. This treat is irresistible and tastes even better after sitting in the fridge overnight.

Serving Size: 8-10 pieces

Ingredients:

Cake Batter:
- 1 1/2 cups (3.6 dl) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup (0.6 dl) oil (canola or sunflower oil)
- 1/2 cup (1.2 dl) brown sugar
- 1 tsp vanilla sugar
- 1/2 tsp cinnamon
- 1/2 tsp cardamom (or more to taste)
- 1 room temperature egg
- 3/4 cup (1.8 dl) buttermilk or 200 g sour cream or plain yogurt
Crumble Topping:
- 1/3 cup (0.8 dl) all-purpose flour
- 1/2 cup (1.2 dl) sugar
- 1/4 cup (approx. 57 g) butter
- A pinch of cinnamon

Instructions:

1. In a bowl, mix together the oil, brown sugar, and vanilla sugar.
2. Add the egg and mix until smooth.
3. Incorporate the buttermilk, sour cream, or yogurt and mix until combined.
4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients.
5. Stir until the batter is smooth and no flour lumps remain.
6. Spoon half of the batter into a 20x20 cm baking pan.
7. Sprinkle a little cinnamon and brown sugar on top.
8. Add the remaining batter on top and smooth the surface.
9. To prepare the crumble topping: In a bowl, mix all the topping ingredients and pinch them together until crumbly.
10. Sprinkle the crumble mixture over the cake.
11. Bake in a preheated oven at 175°C (350°F) for about 17-21 minutes. Check for doneness with a toothpick; the cake is ready when no batter sticks to the toothpick.
