A delicious creamy pasta dish with fresh spinach sauce, quick to prepare and perfect for a weeknight dinner.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 1 onion
- 2 garlic cloves
- 50 g grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain, reserving some pasta water.
2. Peel and finely chop the onion and garlic.
3. Heat olive oil in a large pan over medium heat. Add the onion and sauté until soft.
4. Add the garlic and cook for another minute.
5. Add the fresh spinach to the pan and cook until wilted.
6. Pour in the cream and stir. Heat the sauce but do not boil.
7. Add the drained pasta to the sauce and mix well. If the sauce is too thick, add a little pasta water.
8. Season with salt and pepper to taste. Stir in the grated Parmesan cheese.
9. Serve warm, garnished with fresh basil if desired.
