Ingredients:
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 1 cup mushrooms, sliced
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat the olive oil in a large skillet or wok over medium-high heat.
2. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.
3. Add the broccoli, bell pepper, snap peas, carrot, and mushrooms to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
4. Pour in the soy sauce, and stir well to combine. Cook for an additional 2 minutes.
5. Season with salt and pepper to taste.
6. Serve the vegetable stir-fry over cooked rice or noodles.
