This colorful and nutritious vegetable stir-fry is quick to make and packed with flavor, making it a perfect weeknight meal.
Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the sliced bell pepper and carrot, and stir-fry for about 2 minutes.
3. Add the broccoli florets and snap peas, and continue to stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
4. Stir in the minced garlic and cook for 30 seconds until fragrant.
5. Pour in the soy sauce and oyster sauce (if using), and toss the vegetables to coat.
6. Drizzle with sesame oil, and season with salt and pepper to taste.
7. Serve hot over cooked rice or noodles.
