Ingredients:
- 2 tablespoons vegetable oil - 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 carrot, julienned
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat the vegetable oil in a large skillet or wok over medium-high heat. 2. Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
3. Add the bell pepper, broccoli, snap peas, carrot, and zucchini to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp.
4. Pour in the soy sauce and sesame oil, tossing to coat the vegetables evenly. Season with salt and pepper to taste.
5. Continue to stir-fry for an additional 2-3 minutes.
6. Serve the stir-fry over cooked rice or noodles.
