Ingredients:
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 1 cup sliced mushrooms
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions:
1. Heat olive oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
3. Add broccoli and carrots first, stir-frying for 3-4 minutes.
4. Add bell pepper, snap peas, and mushrooms to the skillet, continuing to stir-fry for another 3-4 minutes until vegetables are tender but still crisp.
5. Pour in soy sauce and season with salt and pepper. Stir well to combine and cook for an additional minute.
6. Serve hot over cooked rice or noodles.
