Ingredients:
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sesame seeds (optional)
- Cooked rice or noodles, for serving
Instructions:
1. Heat vegetable oil in a large skillet or wok over medium-high heat.
2. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
3. Add the bell pepper, carrot, and zucchini. Stir-fry for 3-4 minutes until they begin to soften.
4. Add the broccoli and snap peas, and continue to stir-fry for another 3-4 minutes until all vegetables are tender-crisp.
5. Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly. Cook for an additional minute.
6. Remove from heat and sprinkle with sesame seeds if desired.
7. Serve warm over cooked rice or noodles.
