Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Cooking spray or additional butter for the pan
Instructions:
1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; small lumps are okay.
4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
6. Flip the pancakes and cook for another 1-2 minutes until golden brown.
7. Repeat with remaining batter, greasing the skillet as needed.
8. Serve warm with your favorite toppings such as syrup, fresh fruit, or whipped cream.
