Ingredients:

- 1 ¼ cups water
- A pinch of salt
- 3 ½ tablespoons butter
- 2 ½ cups all-purpose flour
- 3 large eggs
- 1 tablespoon sugar
- About 4 cups canola oil for frying
- 1 tablespoon cinnamon
- ½ cup sugar (for cinnamon sugar)

Instructions:

1. In a pot, combine water, sugar, salt, and butter. Mix well and bring to a quick boil.
2. Remove the pot from heat and add the flour. Stir until well combined.
3. Let the dough rest in the pot for a moment to dry out slightly.
4. Beat in the eggs one at a time until the mixture is smooth.
5. Heat the canola oil in a large pot to around 350°F (180°C).
6. Place the churro dough in a piping bag and pipe 4-inch long sticks into the hot oil.
7. Fry the churros for about 3 minutes until golden brown.
8. Use a slotted spoon to remove the churros from the oil and roll them in the cinnamon-sugar mixture.
