A delicious recipe that combines oat crumble and chorizo as a filling for large peppers, making it a great option for lunch or dinner.

Ingredients:

- 4 large bell peppers
- 1 cup oat crumble
- 150 g chorizo
- 1 medium onion
- 1 zucchini
- 100 g feta cheese
- 2 tablespoons paella seasoning (or smoked paprika, saffron, and cayenne pepper)
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat the oven to 180°C (350°F).
2. Cook the oat crumble according to the package instructions and set aside to cool.
3. Chop the chorizo, onion, and zucchini into small pieces.
4. Heat the olive oil in a pan and sauté the onion until soft. Add the chorizo and zucchini, cooking for a few more minutes.
5. Mix the sautéed ingredients with the oat crumble. Add crumbled feta and seasonings. Combine well.
6. Halve the bell peppers vertically and remove the seeds. Fill the peppers with the oat mixture.
7. Place the stuffed peppers in a baking dish and bake in the oven for about 25-30 minutes until the peppers are soft.
8. Serve warm and enjoy!
