Ingredients:

- 4 chorizo sausages
- 4 hot dog buns
- 1 red bell pepper, sliced
- 1 green chili, finely chopped
- 2 cups cabbage, shredded
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- Fresh cilantro (optional)

Instructions:

1. Cook the chorizo sausages in a skillet over medium heat until golden brown and cooked through, about 10-15 minutes.
2. In a bowl, prepare the coleslaw by mixing together the shredded cabbage, sliced red bell pepper, and chopped green chili.
3. Add the mayonnaise and apple cider vinegar to the coleslaw mixture. Season with salt and pepper. Mix well.
4. Lightly warm the hot dog buns in the oven or on a skillet.
5. Place the cooked chorizo sausages in the hot dog buns and top with the paprika-chili coleslaw.
6. Garnish with fresh cilantro if desired.
