A refreshing and crunchy coleslaw with a delightful Asian twist. Perfect as a side dish or topping for burgers. Preparation Time: 15 minutes
Serving Size: 4 servings
Ingredients:
- 1 small cabbage (green or red)
- 2 carrots
- 1 red onion
- 1 red bell pepper
- 1 cup fresh cilantro
- 1 cup chopped peanuts
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or sugar
- Salt and pepper to taste
Instructions:
1. Thinly slice the cabbage, carrots, red onion, and red bell pepper.
2. In a large bowl, combine the sliced vegetables.
3. Add the chopped cilantro and peanuts to the vegetable mixture.
4. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey/sugar.
5. Pour the dressing over the vegetables and mix well.
6. Season with salt and pepper to taste.
7. Allow the coleslaw to chill in the refrigerator for about 30 minutes before serving.
8. Serve as a side dish or as a topping for burgers.
