Chili Shrimp Noodles

A delicious blend of spicy shrimp and fresh vegetables in a sweet chili sauce. Perfect for a busy weeknight meal! Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 1 small red bell pepper
- 1 small yellow bell pepper
- 1 carrot
- 50 g red onion
- 200 g broccoli
- 75 g leek
- 250 g wheat noodles
- 1½ l water
- 2 tbsp oil
- ½ dl sweet chili & pineapple sauce
- 1 tsp ginger paste
- 1 tsp salt
- 2 tbsp lime juice
- 1 pack chili-cilantro shrimp (frozen)
Instructions:
1. Cook the noodles according to the package instructions and drain them.
2. Chop the red and yellow bell peppers, carrot, red onion, broccoli, and leek.
3. Heat the oil in a large pan and add the chopped vegetables. Sauté for about 5 minutes.
4. Add the shrimp and ginger paste to the pan and cook for another 3-4 minutes.
5. Mix in the cooked noodles, sweet chili & pineapple sauce, lime juice, and salt. Stir well.
6. Allow to heat for a few more minutes and serve immediately.
