A warming and spicy soup perfect for fall evenings, blending the sweetness of sweet potatoes with the smoky flavor of chipotle chili for a delicious experience. Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 2 medium sweet potatoes
- 1 onion
- 2 garlic cloves
- 1 can (400 g) coconut milk
- 1 liter vegetable broth
- 2 tablespoons chipotle chili sauce (or to taste)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lime
- Fresh cilantro (for garnish)
Instructions:
1. Peel and chop the sweet potatoes, onion, and garlic.
2. Heat a large pot over medium heat and add a little oil.
3. Add the onion and garlic to the pot and sauté for about 5 minutes until the onion is soft.
4. Add the sweet potatoes to the pot and mix well.
5. Pour in the vegetable broth and coconut milk. Add the chipotle chili sauce, salt, and black pepper.
6. Bring the mixture to a boil and then simmer on medium heat for about 20-25 minutes, until the sweet potatoes are tender.
7. Blend the soup with an immersion blender or in a blender until smooth.
8. Stir in the lime juice and mix again.
9. Serve the soup garnished with fresh cilantro leaves.
