Chimichanga - Deep-Fried Burrito

Ingredients:
- 4 large tortillas
- 400 g ground beef (or chicken)
- 1 dl black beans (cooked)
- 1 dl rice (cooked)
- 1 dl shredded cheese (e.g., cheddar)
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Oil for deep frying
- Salsa and guacamole for serving
Instructions:
1. Heat a pan over medium heat and add a little oil. Sauté the onion and garlic until softened.
2. Add the ground meat to the pan and cook until fully browned. Season with chili powder, cumin, salt, and pepper.
3. Stir in the black beans and cooked rice. Heat the mixture through.
4. Lay out the tortillas and fill each one with the meat mixture. Top with shredded cheese.
5. Fold the edges of the tortilla inward and roll tightly into a burrito.
6. Heat oil in a deep pot or skillet. Test the oil temperature by dropping in a small piece of dough; it should float and bubble.
7. Deep-fry the burritos in the hot oil until golden brown and crispy. Remove and drain on paper towels.
8. Serve hot with salsa and guacamole. Enjoy!
