Ingredients:
- 2 tablespoons olive oil - 2 onions, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 zucchini, diced
- 400 g cooked white beans
- 800 g crushed tomatoes
- 1.5 teaspoons thyme
- 1 teaspoon black pepper
- 1 tablespoon cumin
- 1 teaspoon cayenne pepper
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons sea salt
Instructions:
1. Heat olive oil in a large skillet over medium heat. 2. Add chopped onions and sauté for about 5 minutes until they soften.
3. Add crushed garlic and diced bell pepper. Cook for an additional 3-4 minutes.
4. Stir in the diced zucchini and cook for a few minutes until it begins to soften.
5. Mix in the cooked white beans and crushed tomatoes.
6. Season the mixture with thyme, black pepper, cumin, cayenne pepper, and sea salt. Mix well.
7. Allow the mixture to simmer on low heat for about 15-20 minutes, until all flavors meld together.
8. Serve warm, garnished with fresh parsley.
