Ingredients

For the Chicken Skewers:
- 4 chicken breast fillets
- 2 dl coconut cream
- 1 tbsp fish sauce
- 1 tbsp red curry paste
- 1 tbsp cane sugar
- A pinch of turmeric
- 1.5 tsp salt
- Skewers (soaked in water before use)
For the Satay Sauce:
- 1 dl coconut cream
- 1 tbsp lemongrass paste
- 3 tbsp peanut butter
- 1 tbsp sesame oil
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp red curry paste
- 4 tbsp tamarind paste
- 1 tbsp cane sugar
- 1 tsp sriracha
- 1 tbsp lime juice
- 0.5 tsp garlic powder

Instructions

1. Cut the chicken breast fillets into 6-8 smaller pieces.
2. In a bowl or plastic bag, mix the marinade ingredients (coconut cream, fish sauce, curry paste, sugar, turmeric, and salt).
3. Add the chicken pieces to the marinade and mix well. Allow to marinate in the refrigerator for at least 2 hours or overnight.
4. Thread the marinated chicken pieces onto the skewers (3-4 pieces per skewer).
5. Cook the skewers on a grill, griddle pan, or in an oven at 220°C (428°F) for about 20 minutes, until cooked through.
6. Prepare the satay sauce by mixing all the sauce ingredients together in a bowl.
7. Serve the chicken skewers with the satay sauce.
