Cheese Cookies with Parmesan and Apricots

Ingredients:
- 100 g Parmesan cheese
- 100 g butter, softened
- 1 dl all-purpose flour
- 1 dl cornstarch
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 fresh apricots, chopped
Instructions:
1. Grate the Parmesan cheese coarsely.
2. In a bowl, cream the softened butter until fluffy.
3. Add the grated Parmesan, all-purpose flour, cornstarch, salt, and black pepper. Mix until the dough is smooth.
4. Gently fold in the chopped apricots.
5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
6. Bake at 180°C (350°F) for about 15-20 minutes, or until the cookies are golden brown.
7. Allow to cool slightly before serving.
