Ingredients:

- 400 g chicken fillets
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 2 dl rice
- 4 dl chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon chili (optional)
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat.
2. Add chopped onion and crushed garlic, sauté until soft.
3. Add chicken fillets to the skillet and cook until golden brown on all sides.
4. Add diced red bell pepper and continue to sauté for a few more minutes.
5. Stir in the rice, mixing well.
6. Pour in the chicken broth, then add salt, black pepper, paprika, and chili (if using).
7. Bring to a boil, then reduce heat and cover the skillet. Let it simmer for about 15-20 minutes, until the rice is cooked and liquid is absorbed.
8. Remove the skillet from heat and let it rest covered for a few minutes.
9. Serve with fresh parsley on top.
