A delicious and colorful tomato-mozzarella tart that brings the flavors of Italy to your special occasions. Easy to prepare and perfect for serving at gatherings.

Serving Size: 6-8 servings

Ingredients:

- 1 (500 g) puff pastry (e.g. pre-rolled store-bought)
- 1 egg
- About 10 medium-sized tomatoes
- 350-400 g sliced mozzarella cheese
- 150 g plain cream cheese
- 3 tablespoons pesto
- 1 bunch of basil
- Cracked black pepper

Instructions:

1. Allow the pastry to thaw according to package instructions.
2. Line a baking sheet or tart pan with parchment paper.
3. Roll out the pastry into a rectangle approximately 25x32 cm and transfer it to the baking sheet.
4. Cut even slits about 1 cm from the edges of the pastry and brush the edges lightly with the beaten egg.
5. Prick the center of the pastry with a fork to create holes.
6. Cut a piece of parchment paper the size of the center and place it on top of the pastry so the edges can rise while baking.
7. Place steel knives on the paper as weights.
8. Bake the base in a preheated oven at 200°C (392°F) on the lower rack for 20 minutes.
9. Remove the knives and paper, and bake for an additional 3-5 minutes until fully cooked. Let the base cool completely.
10. Rinse and slice the tomatoes.
11. Spread a layer of cream cheese mixed with pesto over the cooled tart base.
12. Arrange alternating slices of tomatoes, mozzarella, and basil on top.
13. Finish the tart with cracked black pepper.
