A delicious and filling oven dish where cannellonis are baked upright with a flavorful Bolognese sauce and creamy cheese sauce. Serves 5-6.

Ingredients

Bolognese Sauce:
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 carrot, peeled and diced
- 1 celery stalk, diced
- 2 sprigs of rosemary, chopped
- 3 slices of bacon, chopped
- Olive oil
- 500 g ground beef
- 1 can (400 g) crushed tomatoes
- 1 tablespoon tomato paste
- 1 tablespoon balsamic vinegar
- A pinch of sugar
- 1 bird's eye chili, finely chopped
- 3 bay leaves
- 1 beef bouillon cube
- Black pepper, to taste
- A handful of fresh basil, chopped
Cheese Sauce:
- 6 tablespoons butter
- 6 tablespoons all-purpose flour
- 15-16 dl milk
- 200 g mozzarella cheese, grated
- Salt, to taste
- White pepper, to taste
Assembly:
- 1 batch of Bolognese sauce
- 1 batch of cheese sauce
- 300-350 g cannelloni tubes
- A knob of butter
- 50 g mozzarella cheese, grated

Instructions

1. Prepare the Bolognese Sauce: Peel and finely chop the onion, garlic, carrot, and celery. Chop the rosemary and cut the bacon into small pieces.
2. Heat olive oil in a pan and add bacon, rosemary, onion, garlic, and vegetables. Cook, stirring until softened and browned.
3. Add the ground beef and brown it. Then add crushed tomatoes, tomato paste, balsamic vinegar, sugar, chili, bay leaves, and beef bouillon. Season with black pepper and let simmer on low heat for about an hour.
4. Prepare the Cheese Sauce: Melt butter in a saucepan, add flour, and mix well. Gradually add milk and cook on low heat for about 10 minutes. Add grated cheese and season with salt and white pepper.
5. Grease a high-sided baking dish with butter. Spread a layer of cheese sauce at the bottom, followed by a layer of Bolognese sauce, and arrange the cannelloni upright.
6. Pour the remaining cheese and Bolognese sauces over the cannelloni until the dish is full. Sprinkle grated mozzarella on top.
7. Bake at 180°C (350°F) in a convection oven for about 45 minutes until the top is beautifully golden. Cover with foil if it starts to dry out.
8. Let rest for 15-20 minutes before serving.
