Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little pasta water. 2. Heat olive oil in a large skillet over medium heat. Add the onion and sauté for about 5 minutes until soft.
3. Add the crushed garlic and cherry tomatoes. Cook for a few more minutes until the tomatoes begin to soften.
4. Stir in the fresh spinach and mix until it wilts slightly.
5. Combine the cooked pasta with the skillet mixture and stir well. If needed, add a little reserved pasta water to prevent the pasta from drying out.
6. Season with salt and pepper. Add the crumbled feta cheese and mix.
7. Serve the pasta garnished with fresh basil.
