A rich and flavorful soup that makes a perfect appetizer or a light main course.
Preparation Time: 30 minutes
Serving Size: 4 servings

Ingredients:

- 400 g mushrooms
- 1 onion
- 2 garlic cloves
- 2 tbsp butter
- 1 l vegetable broth
- 2 dl cream
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish

Instructions:

1. Chop the onion and garlic finely.
2. Heat the butter in a pot and sauté the onion and garlic until soft.
3. Slice the mushrooms and add them to the pot. Cook for about 5 minutes until the mushrooms are tender.
4. Pour in the vegetable broth and bring to a boil. Let it simmer on low heat for about 10 minutes.
5. Add the cream to the soup and mix well. Season with salt and black pepper.
6. Blend the soup with an immersion blender or in a blender if desired.
7. Serve hot, garnished with fresh parsley.
