Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 200 ml heavy cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 50 g Parmesan cheese (grated)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve some pasta water.
2. Chop the onion and garlic. In a large pan, heat the olive oil over medium heat, add the onion and garlic, and sauté until softened.
3. Add the chopped mushrooms to the pan and cook until they are tender and the moisture has evaporated.
4. Pour in the heavy cream and mix well. Let it simmer on low heat for about 5 minutes.
5. Add the cooked pasta to the pan and mix all the ingredients together. If the mixture is too thick, add a little reserved pasta water.
6. Season with salt and black pepper. Stir in the grated Parmesan cheese until melted and combined.
7. Serve warm, garnished with fresh parsley.
