Ingredients:
- 4 eggs - 1 avocado
- 200 g smoked salmon
- 4 slices whole grain bread
- 100 g fresh feta cheese
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
- Fresh dill for garnish
Instructions:
1. Boil the eggs to your desired doneness (about 6-8 minutes).2. Toast the bread slices in a skillet with olive oil until golden brown and crispy.
3. Cut the avocado in half and remove the pit. Mash the avocado flesh in a bowl and season with lemon juice, salt, and pepper.
4. Spread the mashed avocado over the toasted bread slices.
5. Layer the smoked salmon on top of the avocado and crumble feta cheese over it.
6. Peel and slice the boiled eggs and place them on top of the servings.
7. Garnish with fresh dill and serve immediately.
