A delicious and nutritious Indonesian salad combining fresh vegetables, protein, and a flavorful peanut sauce. Perfect as a light meal or side dish! Preparation Time: 30 minutes

Ingredients:
- 200 g green beans - 2 potatoes
- 2 carrots
- 150 g tofu
- 200 g roasted peanuts
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp sugar
- 1 garlic clove
- 1 tbsp chili powder (to taste)
- 100 ml water
- Fresh coriander for garnish
Instructions:
1. Boil the peeled and chopped potatoes until soft. Drain and set aside. 2. Cook the green beans in boiling water for about 3-4 minutes until bright green and crisp. Drain and cool in cold water.
3. Peel and slice the carrots, lightly boiling them until soft but still crisp.
4. Fry the tofu in a pan until golden brown, then cut it into cubes.
5. To make the peanut sauce, blend the roasted peanuts, soy sauce, lime juice, sugar, crushed garlic, chili powder, and water in a blender until smooth.
6. Arrange the cooked vegetables and tofu on a plate, then pour the peanut sauce over the top.
7. Garnish with fresh coriander and serve immediately.
