Delicious and quick broiler paninis that can be made in a sandwich grill, waffle iron, or oven. Perfect for a quick lunch or a tasty dinner.
Preparation Time: 20 minutes
Serving Size: 2 paninis

Ingredients:

- 2 pancake breads or panini breads
- 200 g chicken fillets (or 200 g Quorn/seitan for a vegan version)
- 100 g cheese (e.g., mozzarella or cheddar)
- 1 tomato, sliced
- 1 avocado, sliced
- 1/2 dl mayonnaise or vegan mayonnaise
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley) for garnish

Instructions:

1. Preheat the sandwich grill, waffle iron, or oven to 200°C (392°F).
2. Season the chicken fillets with salt and pepper. Cook them in a pan until golden brown and fully cooked.
3. Slice the breads open and spread mayonnaise on both sides.
4. Place the cooked chicken inside the bread.
5. Add cheese slices, tomato slices, and avocado.
6. Close the bread and grill in the sandwich maker, waffle iron, or oven for about 5-7 minutes, until the bread is crispy and the cheese is melted.
7. Remove the paninis and garnish with fresh herbs before serving.
