- 400 g chicken strips - Salt to taste
- Curry powder to taste
- ½ chicken stock cube
- 1 small zucchini
- 1 tablespoon oil
- 2 spring onions
- 2 red bell peppers
Instructions
1. Heat the oil in a skillet over medium heat. 2. Add the chicken strips and cook until they are golden brown.
3. Season with salt and curry powder.
4. Add the chopped zucchini, sliced spring onions, and diced red bell peppers.
5. Crumble the chicken stock cube into the mixture and stir well.
6. Cover and simmer for about 10-15 minutes, until the vegetables are tender and the chicken is cooked through.
7. Serve warm, accompanied by rice or potatoes.
