Ingredients

- 800 g chicken breast fillets (seasoned)
- 8 dl water
- 1 can pineapple chunks (in its own juice)
- 4 dl rice
- 2 tbsp Cajun spice mix
- 100 g blue cheese (crumbled)
- A pinch of black pepper
- 1 chicken bouillon cube
- 2.5 dl heavy cream

Instructions

1. Preheat the oven to 200°C (392°F).
2. Lightly brown the chicken breast fillets in a pan.
3. Add the Cajun spice mix to the pan and mix well.
4. Cook the rice according to the package instructions using 8 dl of water and the chicken bouillon cube.
5. Once the rice is cooked, stir in the pineapple chunks along with their juice.
6. Pour the rice and pineapple mixture into a baking dish and place the browned chicken fillets on top.
7. Prepare the sauce: heat the heavy cream in a pan and add the crumbled blue cheese, stirring until the cheese is melted.
8. Pour the sauce over the chicken and rice in the baking dish.
9. Bake in the oven for about 25-30 minutes or until the chicken is fully cooked.
10. Serve warm and enjoy!
